The perfect Mini Poppers for game day!

With Football season in full swing, we have the perfect appetizer to serve up to your cheering section! Not only are these Mini Poppers sure to be a hit, they are easy to whip up!

Here is what you need:
• 1 lb bag Sweet Mini Peppers
• 8 oz Cream Cheese or Goat Cheese
• 1 c Fresh Cilantro
• ⅔ c Toasted Walnuts
• Small pinch of Salt
• ¼ cup Parmesan Cheese
• ½ c Olive Oil
• 1 tbsp fresh Orange Juice

Directions:
1. Heat oven to 350 degrees.
2. Leaving stem on peppers, slice them and remove seeds .
3. Fill each pepper with small amount of cheese. Arrange peppers on baking sheet & drizzle a small amount of olive oil over the top.
4. Place in oven and bake for 8-10 minutes.
5. While peppers are in the oven, add cilantro, walnuts, salt, Parmesan cheese, olive oil, and orange juice into a blender or food processor and puree.
6. Once peppers have a crispy edge, remove from the oven – Spoon pesto over the top of each pepper.
